Planting, maturity and harvest times
Purple Magic is a mid-season maturing variety. Plant this variety in mid-May for a late August/early September harvest. 90-105 days till maturity. Space 30 cm (12”) apart. It grows well in gardens and containers alike. Add nutrients/fertilizer at planting time.
Cooking Applications
Purple Magic has a slightly dry floury texture with a great taste (not bitter like some purple varieties). This variety works very well for home fries, roasting, and chips with very low disclouration of the attractive purple colour when cooked. Due to its higher starch content it is not very suitable for boiling as it can get a bit mushy. However younger Purple Magic potatoes can be boiled earlier in the season, prior to most of the starch forming in the potatoes, and is therefore a good choice for colourful potato salads earlier in the summer.

Approximately 5 months at 6 degrees Celsius.
